Superfood Risotto


This super healthy risotto style dish is made with spinach and swiss chard. Spinach is one of the best sources of dietary magnesium, which helps maintain a healthy immune system and blood pressure as well as energy metabolism, muscle and nerve function, and regular heart rhythm. Swiss chard is a nutritional powerhouse packed with disease-fighting antioxidants. Good for you and great tasting!

Ingredients
3 tbsp olive oil
1 small onion, chopped
1 shallot, chopped
1 garlic clove, roughly chopped
2 to 3 cups stock*
2 cups swiss chard, chopped
1 cup spinach, chopped
1 tbsp salt
1 cup short grain rice

In a pot, heat the oil and cook the onions and garlic until the onions are translucent (approximately 3 minutes). Add the swiss chard, spinach, and salt and cook for an additional couple of minutes until the vegetables start to wilt. Add the rice and cook for an additional minute.

Add 2 cups of the stock, reduce the heat and simmer until most of the liquid is absorbed (15 to 20 minutes). Stir occasionally and check the rice to ensure it is cooked to the desired consistency. If needed, add more stock until the rice is tender.

Makes 2 to 4 servings. * Use stock of choice (for vegetarian, use a vegetable stock).
