Potatoes in Feta Sauce

I am always looking for ways to change the food we eat every day. While on a trip to Savannah, I tried a salad with feta dressing, and I thought, why not make it with potatoes? You know what – it turned out delicious. It is a dish that we will certainly be making once again.

Ingredients
5 medium to large-sized potatoes
1 cup sour cream
1 cup mayonnaise
1 cup crumbled feta
1/4 cup sliced manzanilla olives
1 teaspoon oregano
Oil for frying potato slices

Clean the potatoes and slice them into 1/4” rounds. Boil a pot of water and parboil the potatoes until just softened (approximately 8 to 10 minutes.) Drain the potatoes and set aside. Heat the oil to fry the parboiled potato slices. Drop in the potatoes in batches and fry until crisp and golden on the outside. Since you have parboiled the potatoes, this process does not take very long. Place the fried potatoes on a serving plate lined with a paper towel to soak up excess oil.

Mix together the sour cream, mayonnaise, crumbled feta, olives, and oregano. Toss the prepared potatoes in the dressing and serve immediately.
