This risotto style dish is easy to make for a quick, filling meal. This vegetarian dish requires only a few ingredients and, unlike traditional risotto, can be left to reduce. Cabbage adds a unique twist to a simple risotto dish.

1 tbsp olive oil
1 cup chopped onion
4 cups water
2 cups cooked cabbage, sliced
1 tbsp tomato paste
1 tbsp salt
1 cup short grain rice

Slice the cabbage into 1” to 2” thick pieces and cook in boiling salted water until almost tender (approximately 3 to 5 minutes). Strain and rinse with cold water. In a pot, heat the oil and cook the onions for 3 minutes. Add the cooked cabbage, salt, tomato paste and rice. Cook for an additional minute. Add the water and simmer until all liquid is absorbed.

Makes 4 to 6 servings
