One of my favorite KFC sides, this copycat recipe tastes just like the restaurant bought version with a little added crunch from the carrot and celery. Serve it with fried chicken and french fries and it’s like you went to visit the Colonel himself.
Ingredients
1 1/2 cups elbow macaroni, cooked
2 celery stacks, finely minced
1 carrot, finely minced
2 tablespoons minced onion
1/2 cup dill pickle, minced
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dry mustard
1 1/2 cups Miracle Whip
1/2 cup mayonnaise
Boil the pasta according to package directions. Drain and set aside. In a bowl, mix all the other ingredients until well blended. Add the pasta and toss to cover. Refrigerate until serving.
Serves 4 to 6.
