Pesto Salad


Bow pasta is tossed with homemade pesto that takes minutes to make! This salad makes a great side dish with any grilled meat. Top with Parmesan cheese and add grape tomatoes. After you try it, you’ll never want to buy ready made pesto again.

Ingredients – Salad
2 cups pasta, cooked
1/4 cup pesto
1 cup grape tomatoes
4 tbsp olive oil
Parmesan cheese

Ingredients – Pesto
40g fresh basil, finely chopped
1 1/2 garlic cloves, finely chopped
1/2 cup walnuts, finely chopped
1/4 olive oil
1/4 cup Parmesan cheese
1/2 tsp salt

Prepare the pesto by mixing the chopped basil, garlic, walnuts, salt and Parmesan cheese. Add the olive oil and mix until incorporated. Set the pesto aside.

Prepare the pasta according to package directions. You can use any shape of pasta for this salad, including spaghetti. Toss the cooked pasta with the pesto and the additional oil. Add grape tomatoes and Parmesan cheese to serve.
