Orzo Salad

Salad is a wonderfully lighter way to enjoy this little oval-shaped pasta. Served with halloumi cheese to add a bit of a mild salt flavor, you will be happy to make this dish again and again. Serve as a side or as a light meal.

Ingredients
1 cup orzo
1/4 cup fresh basil
1/4 cup minced onion
1/4 cup chopped tomatoes
2 tablespoons olive oil
1-235g package halloumi cheese

For the dressing:
Juice of one lemon
1 tablespoon honey
1/4 cup olive oil
1 teaspoon Kosher salt
1 teaspoon white pepper

Cook the orzo according to package directions. Drain and set aside. Prepare the basil, onion, and tomato and set aside. Slice the halloumi cheese into 1/4” rounds and brush on all sides with the olive oil. Place cheese slices onto a non-stick ridged skillet in one layer. Do not overcrowd the pan. Cook on medium-high for a few minutes, and do not move. The cheese will release some liquid. Once the liquid evaporates, the cheese turns golden brown quickly. Turn over and repeat cooking on the other side.

Mix together all the ingredients for the dressing and toss with the orzo. Top with the halloumi cheese.

Serves 3 to 4.
