Mediterranean Salad

Summertime is full of fresh vegetables and the best time to make a salad. This one adds the Mediterranean flavors of garlic, lemon and feta. Enjoy it with toasted baguettes or just on its own.

1 head romaine lettuce
1 head endive
1 cup cherry tomatoes
1 small bell pepper
1 teaspoon fresh basil
1 teaspoon fresh oregano
1/2 cucumber
1/2 cup crumbled feta

Ingredients – Dressing
1 tablespoon lemon juice
1 tablespoon white balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 cup olive oil

In a large bowl, slice the cucumbers and bell pepper into thin slices. Cut the endive and add it to the salad along with the cherry tomatoes. Top with the chopped fresh herbs. Cop the romaine lettuce and add to the salad. Top with the crumbled feta.

Make the dressing by mixing together all the ingredients. Shake well and drizzle over the prepared salad. Toss and serve.

Serves 2 to 4.
