Traditional Greek tomato salad has only a few ingredients: ripe tomatoes, cucumber, olives, onion, and, of course, Greek feta. Simply dressed with an oil and vinegar dressing, it is a superb start to any meal. Make sure to use real Greek feta made with sheep milk and have lots of bread for dipping.
2 tbsp olive oil
1 tsp white balsamic vinegar
4 tomatoes, cut into bite size pieces
1 cucumber, cubed
1/2 cup sweet onion, sliced
1 cup feta, cubed
1/2 cup Kalamata olives, sliced
1 tsp salt
1 tsp dried oregano or 2 tsp fresh oregano
Cut tomatoes and cucumbers and add into a bowl. Add sliced onions, feta, and sliced olives. In a salad dressing shaker or a measuring cup, mix together the oil, vinegar, salt and oregano. Shake/mix well and pour over the tomatoes.
