Spetzofai (or “spetsofai”) is a classic Greek dish made with sausages, tomatoes and bell peppers with a hint of spicy heat. There are a number of variations of the dish with some of them adding eggplant as well. The sausage is grilled first for added smokiness.

6 mild sausages
2 yellow bell peppers, roughly chopped
2 red bell peppers, roughly chopped
1 onion, roughly chopped
1 cup grape tomatoes, chopped
1 tbsp tomato paste
1 tsp sugar
1 tbsp chili flakes
1 tsp smoked paprika
2 tsp fresh ground pepper
1 cup water
2 tbsp olive oil

Heat the oil in a frying pan and add the peppers and onions. Cook for 3 minutes to sweat the onions. Add the tomato paste, sugar, and tomatoes. Add the spices and water and simmer until the liquid thickens and the vegetables are cooked.

In the meantime, place the sausages directly on the barbeque grate and grill until cooked through (approximately 10 to 15 minutes), ensuring to turn frequently. Once cooked, slice the sausages and toss with the sauce. Serve with warm bread for dipping.

Serves 4 to 6.
