Souvlakia


One of Greece’s most famous dishes, souvlakia can be served on a stick or in a pita. Served with tsatsiki, you feel like you are sitting at a taverna while eating these mouthwatering morsels. This simple recipe coats the souvlakia in “latholemono”, a Greek marinade of oil and lemon.

Ingredients
1 pork roast (shoulder or rib), 2 lb
1/4 cup oil
1/4 cup lemon juice
1 tsp Kosher salt
1/2 tsp garlic powder
1 tsp oregano

If using bamboo skewers, soak in cold water for 30 minutes. Make the marinade by combining the oil, lemon juice, and spices. Cut the pork into 1” cubes and toss in the oil marinade. Allow to rest for 1 hour at room temperature.

Skewer pork pieces to half way point (leave bottom half without meat so it is easier to turn them). Grill on the barbeque for 8 to 12 minutes, turning from side to side. Traditionally vegetables are not skewered with the meat, however, onions, peppers and cherry tomatoes can be put between the meat if desired.

Serve on a stick with tsatsiki on the side for dipping or wrapped in a pita with tomato, onion, parsley and, of course, a healthy dollop of tsatsiki.
