Pulled Pork Sandwiches


Although pulled pork takes a long time to slow cook, it is surprisingly easy to make. Use a shoulder cut or boneless rib roast as the fat in the roast helps keep the meat tender and juicy. With an easy to make homemade sauce, you’ll never buy store bought sauces again.

Ingredients
1 pork roast, 2lb
2 tbsp smoked paprika
2 tbsp Kosher salt
2 tbsp garlic powder
1 tsp cumin
1 tsp chili powder
1 tbsp black pepper
1 tbsp onion powder
1 tbsp cayenne
1 tbsp oregano
1 tbsp thyme

Ingredients – Sauce
4 tbsp butter
1/4 cup brown sugar
1/4 cup ketchup
1 tbsp soy sauce
1 tbsp Worcestershire sauce
1/4 cup spiced rum
1 tbsp smoked paprika
1 tsp dry mustard
2 garlic cloves, chopped
1 shallot, chopped

Preheat oven to 200 degrees Fahrenheit. Place a wire rack on the bottom of the roasting pan. Mix together all spices and rub onto the roast on all sides. Place the seasoned pork in the pan, fat side up. Cover with aluminum foil and bake for 4 hours. Remove the foil and bake for an additional 2 hours.

While the meat is cooking, you can prepare the sauce. Melt the butter with the shallots and garlic in a pot until transparent. Add all other ingredients and cook on slow heat for 15 minutes or until sauce has thickened.

Cut the roast into 1” slices. Using two forks, pull apart the meat, shredding it into bite sized pieces. Reserve any crispy bits for the top. Add the prepared sauce to the shredded meat and add any juices from the pork. Serve on a toasted bun of choice.
