Lemon Rabbit


Rabbit is not a common meat on a menu but tastes quite a bit like chicken. It is one of the healthiest, leanest, and most environmentally friendly meats you can eat with higher levels of protein than even beef. It is very lean and best cooked in a sauce or stew that will keep the meat moist. This simple recipe coats it in a lemon sauce.

Ingredients
1 rabbit
2 tsp salt
2 tsp pepper
2 tsp oregano
Juice of one lemon
2 tbsp oil
1/4 cup water

Begin by cutting the rabbit into pieces. The bones are very tender and can easily be chopped apart. Layer the pieces into the pan and season with the salt, pepper, and oregano on both sides. Drizzle with the oil.

Brown the rabbit for 3 minutes or until golden br17own. Turn the pieces over and brown the other side. When done, add the water and cover tightly. Allow the rabbit to steam until the water is reduced, approximately 15 minutes. Add the lemon juice and stir around. Transfer to a serving dish and drizzle on any liquid in the pan.

Serve warm with plain rice. Serves 2 to 4.
