Kefte Souvlakia

We sometimes want a fast and easy way to make souvlakia, and using ground beef does just that. Mixing it together with fresh herbs gives it a wonderful flavor. Shaped into an oval, you can fry or bake the Kefte for a healthier option. Serve it with tsatsiki, tomatoes, and an onion-parsley mix.

Ingredients
1 kg ground beef
1/4 cup panko bread crumbs
1 egg
2 tablespoons fresh basil, chopped
1 tablespoon fresh mint, chopped
1 teaspoon dry oregano
1 teaspoon Kosher salt
1 onion, chopped
1 garlic, minced
3 tablespoons olive oil

Heat 1 tablespoon of olive oil on medium-high heat. Soften the garlic and onion (approximately 3 minutes.) Mix together the ground beef, egg, basil, mint, oregano, salt, and cooked onion mix (including the oil.) Using your hands, shape it into a long oval.

If you are frying, heat the remaining oil in a frying pan on medium-high heat. Cook for approximately 2 minutes on all sides, turning over frequently. They should be cooked until they are no longer pink in the middle (approximately 10 to 15 minutes.)

If baking, place on a sheet of parchment paper on a cookie sheet and bake at 350°F for 25 to 30 minutes, turning over once.

Serve on a pita with your favorite toppings.
