Lamb racks are available at most stores, and although you can cook them as an entire rack, you can also cut them into individual pieces for a great meze. Seasoned with salt, pepper and fresh mint, these chops are tender and delicious.
1 lamb rack, cut into pieces
1 tbsp Kosher salt
1 tbsp fresh ground pepper
1 tbsp fresh mint, chopped
Lay the rack with the bones facing up. Using a knife, cut between the bones to make individual chops approximately 1” thick. Season with salt and pepper on both sides. Add the chopped mint to one side, pressing it into the meat.
Grill on high heat for 4 to 5 minutes each side. Serve hot. Makes 10-12 chops.
