Greek Turkey Burgers


Ground turkey is usually a very dry meat but blended with spinach and feta it becomes a delicious alternative to a regular beef burger. I usually make extra and freeze them to have on hand for a quick meal solution.

Ingredients
2 kg ground turkey
1 tbsp olive oil
1 onion, chopped
1 garlic, chopped
1 cup frozen chopped spinach, drained
2 cups feta, crumbled
1 tsp salt
1 tsp smoked paprika
1 tsp oregano
1 egg, lightly beaten

This recipe makes 16 burgers! If you want less, divide by half.

Add the turkey in a bowl big enough to mix. Add the oil to a pan and brown the onion and garlic. Add to the turkey. Using a sieve, remove any liquid from the frozen spinach and add to the turkey. Add spices, egg and crumbled feta. Mix the burger mixture by hand until well blended.

Wash your hands and lightly grease them. Cut 8 sheets of wax paper approximately 8” long. Form the burger mix into 3” balls onto a sheet of wax paper. Place two burgers per sheet of wax paper. Once done, wash your hands. Fold over the wax paper and using your hands press down on the balls to make the burgers approximately 1” thick.

You may pan fry on medium heat, barbeque or broil in a toaster oven, approximately 5 minutes on each side.

Serve on a toasted bun and garnish with tsatsiki and red leaf lettuce.
