Ravani

Ravani is a traditional Greek dessert made with semolina and flour and is usually seasoned with orange or lemon rind. It is soaked in a syrup that is reduced with a whole cinnamon stick.

Ingredients
4 eggs, separated
1 cup sugar
1 cup melted butter
2 cups semolina flour no. 2
1 teaspoon baking powder
1 cup flour
The rind of one lemon or orange

Ingredients – Syrup
2 cup sugars
4 cups water
1 whole cinnamon stick
Rind piece of an orange or lemon

Preheat the oven to 350°F and spray a 9” x 14” baking pan with non-stick spray. In a pot, bring the sugar, juice, cinnamon stick, rind piece, and water to a boil. Continue to cook until it makes a simple syrup. Melt the butter while making the syrup and set it aside.

Sift together the flour and baking powder. Mix in the semolina. In a mixing bowl fitted with a paddle attachment, whisk the egg whites until fluffy. Add the yolks one at a time and continue whisking until fully blended. Add the melted butter and mix until fully incorporated. Slowly add in the flour mixture until combined.

Pour the batter into a prepared pan. Bake until golden brown on top, approximately 30 minutes. Cut into diamond-shaped pieces while hot. Soak completely with the cooled syrup.

Serves 8 to 10.
