This simple to make dip won’t last long. Served with baked pita chips, it is a delicious start to any get together.
Ingredients
1 1/2 cups chopped red onion
2 cups beef stock
2 tbsp grated fresh ginger
2 clove garlic, finely chopped
1 sprig thyme, leaves removed
1 cup sour cream
1 brick cream cheese (250g),
room temperature
1 tsp balsamic vinegar
Instructions
In a deep pan add the onion, garlic, ginger, thyme sprig and beef stock. Bring to a boil and reduce until all the moisture is absorbed by the onion. Remove from heat and cool.
In the meantime, whip the cream cheese until fluffy. Add the sour cream and vinegar, stirring into the cream cheese until combined. Mix in the onion by hand. Refrigerate at least 1 hour before serving.
