Mushroom Tarts


Unbelievably delicious and easy to make, these little bites will fast become a top choice when having a family get together. Cremini mushrooms have the added benefit of boosting your immune system. The pastry is made in a food processor and can be filled with other little bite-sized treats for school snacks.

Ingredients (pastry)
2 cups flour
1/2 tsp salt
1 cup butter diced
1 cup cream cheese diced

Ingredients (filling)
1 tbsp butter
1 tbsp olive oil
2 cups cremini mushrooms, chopped
1 clove garlic, diced
1 cup whipping cream
1 tbsp lemon juice
1/8 cup finely chopped leeks
1/4 cup chopped parsley
Salt and pepper to taste

Preheat your oven to 400 degrees Fahrenheit. Place the flour and salt into a food processor. Scatter over the butter and cream cheese. Pulse until combined and forms a ball. Wrap in plastic wrap and chill for 30 minutes. In the meantime, prepare the filling by melting butter with olive oil. Add the mushrooms and sauté for approximately 5 minutes or until the juices disappear. Add the garlic and leeks and cook for an additional 5 minutes. Add the cream and bring to a boil (cream should thicken a bit). Add lemon juice and parsley and season with salt an pepper.

Take out dough from the refrigerator and make roughly 1” balls with your hands. Drop balls into a mini muffin tin. Once the tin is full, use your thumb to create a well for the filling. Fill each tart with the prepared filling and bake for 30 minutes or until crust is golden brown.
